Stuffed Chicken Parmesan

Ingredients

2 chicken breasts
1/2 cup flour
3/4 tsp salt
1/2 tsp black pepper
2 large eggs beaten with a fork
1/2 cup bread crumbs
1/3 cup parmesan cheese (finely grated)
3 Tbsp olive oil
2 cups marinara sauce
6 oz shredded mozzarella

Instructions
1. Season chicken with the salt and pepper.
2. Cut a deep slit in the side of each breast, partway through.
3. Stuff each breast with some mozzarella.
4. Prepare 3 bowls, containing:

  • the 2 eggs
  •  the 1/2 cup flour
  • 1/2 bread crumbs and 1/3 cup parmesan cheese, mixed together.

5. With each breast, do the following:

  • Dip in the flour. Shake off extra.
  • Dip in the eggs. Let extra drip back into the bowl.
  • Dip in the bread crumbs, coating thoroughly.

6. Pour olive oil into a skillet, get hot. Then saute each breast for a couple minutes until golden brown on each side.
7. Spray PAM in a casserole dish, and place chicken in the dish.
8. Pour 2 cups of marinara sauce around the chicken, and some on top.
9. Sprinkle remaining mozzarella over the chicken.
10. Cook uncovered at 400 degrees for 20 minutes. Chicken should have internal temperature of 165 degrees.

I surround chicken with cooked rice. I mix the marinara into the rice, or mix Campbell’s cream of chicken soup or cream of mushroom soup into the rice, and place only a small amount of marinara atop the chicken.
