Crockpot Hashbrown Casserole

This is a good breakfast potluck dish.

Ingredients

2lb hash browns (2 bags)
2 or 3 cans of soup: Cream of Chicken, Cheese, or Mushroom. I use one of each.
onions and peppers, as desired.
1 cup (or more) of french fried onions
1 pint sour cream
1 stick of butter (melt in microwave)
2 cups shredded cheddar (optional)

Directions

1. Saute the onions and peppers.

2. Mix everything together, except for the french friend onions.

3. Place in crockpot.

4. Cook 5-6 hours on low.

5. Toward the end, or even at the end, mix in the french fried onions.
